The soul of century-old Bobal, fermented and aged in clay. Made from 100% Bobal with ancestral pre-phylloxera vines over 115 years old on ungrafted roots, this wine is fermented and aged for 14 months in Tinajas (clay amphora jars) followed by 12 months of bottle aging. The neutrality of these ancient orange clay vessels allows the wine to fully express the pure character of century-old Bobal. The harvest is meticulously chosen for slightly advanced phenolic ripeness, resulting in a fine wine with medium-plus body, strong structure, good acidity, and well-polished tannins. A celebration of traditional methods and the natural elegance of Bobal at its most profound.
*Dedicated to Gilbert Rigaud (1912-2003), a visionary painter of the Bibemus crew.
